We are finally done with the malting. It's an interesting process. The oats must be allowed to germinate just a bit then that process is halted by heating them up, lightly roasting them. This releases an enzyme called amylase which is necessary to convert starches to sugars. With the oat malting process completed we are now in the fermenting phase. We're starting with about 250 gallons of fermented oat mash. Mash is a term for the beer-like product that ultimately is distilled and distilled and distilled until we get the oat vodka of our dreams: Sea Level Oat Vodka!
